Rinse until the water runs clear, soak 20–30 minutes, then cook with just 1.5 parts water to 1 part rice. The soak lets the grain elongate instead of breaking.

Why does aging matter in basmati?
Aged grain has lower moisture, so it cooks up drier, longer and more fragrant. Fresh-harvest basmati tends to turn sticky — aged basmati doesn’t.
