Ragi rava vs ragi flour — which do I need?
Rava is coarse and granular — it makes textured dishes like upma and rava idli. Flour is fine — it makes mudde, malt and smooth porridge. Same grain, different textures for different dishes.

How do I use it in idlis?
Replace part of the idli rava or rice with ragi rava in your usual batter — start with a third. You get darker, wholesome idlis that still steam up soft.

Storage

Store in an airtight container in a cool, dry place, away from moisture and direct sunlight. Freshly stone-ground — best used within 3 months while the flavour is at its brightest.
