How to cook it

• Dry-roast on low heat until aromatic — the seeds are oil-rich and toast quickly.
• Grind with roasted red chillies, garlic, curry leaves and salt for classic huchchellu chutney pudi.

Why is it hard to find good niger seed?
It’s a small-acreage traditional oilseed, easily adulterated or stale in loose markets. Ours comes farm-direct and freshly packed, so the natural oils — the whole point of the seed — are intact.

Storage

Store in an airtight container in a cool, dry place, away from moisture and direct sunlight. Best used within 6 months of packing.
