Description
This is ghee the way it was made long before factories existed. It begins with the rare Malnad Gidda — a small, native dwarf cow of the Western Ghats that grazes freely in forest and pasture and gives barely a litre or two of rich A2 milk a day. We make it the slow bilona way: the milk is set into curd, the curd is hand-churned to butter, and the butter is simmered gently to golden ghee. It takes a great deal of milk and a great deal of patience to fill a single jar — and that patience is the whole point.

A single spoon over hot dal, rice or roti is all it takes to taste the difference. Use it for tadka, for festive sweets, or simply melted over a hot plate. No refrigeration needed; keep the spoon dry, and best used within nine months.
